I'm still relatively new around here, and am capped at 100 taming. So, what's the best thing to tame on this server at my particular level, and where abouts is said beastie?
I've explored quite a bit and found a few things, but can't say seem to keep anything alive at a champ spawn for too long.

Dragon or white wyrm is a good choice, along with a nightmare.

Taming question
at 100 taming you can use the Nightmare/WW or Dragon combo. I did really well with that combo on another server.
As for champ spawns... use a necromage instead of a tamer. You will do spawns faster and with a lot less hassle. If you insist on using a tamer, I would suggest this template(assuming you do not have access to any scrolls).

100 eval
100 necro
100 spirit speak
100 taming
100 lore
100 vet
After you get your hands on some ps and a charm of the domesticator, I would scroll spirit speak, eval, taming, lore, and vet. After you play a few months, you get more skill pts. Eventually if you still really like using a tamer for champs, I would use this temp and a good Luck/LRC suit. It won't cost a zillion gp or take 5 years to put together.

110 spirit speak
110 eval

Get a magician's edge, a -0 mage wep wand, SoP, or any other mage wep-0 item. Get a Wheel of Fortune and Armor of Fortune if possible. If you get jewels with + taming skills, you can even scroll your guy up more. I know it doesn't have all 120s, but it should be very effective at champs.
